Ingredients

  • 12 Ounces Chicken Apple Sausage
  • 1 Pound Brussel Sprouts
  • 1 Pound Sweet Potato
  • 4 Tablespoons Extra Virgin Olive Oil
  • 1 Lemon
  • 1/4 Garlic
  • 1 Tablespoon Parsley Flakes
  • 1 Teaspoon Kosher Salt
  • 1/2 Teaspoon Black Pepper
  • 1/2 Cup Dried Cranberries

Directions

  • Preheat oven to 400 degrees
  • Wash and half Brussel sprouts. Peel and dice sweet potato into 3/4 inch pieces. Cut sausages into 2 inch lengths.
  • Zest lemon. Combine oil, zest, 4 cloves garlic, salt, and pepper.
  • Spread veggies and sausage in a sheet pan and drizzle with oil mixture. Toss to coat.
  • Bake at 400 degrees for 30 minutes stirring at least once.
  • Remove from oven and sprinkle with dried cranberries.
