Ingredients

  • 2 Cups All Purpose Flour
  • 1/2 Cup Granulated Sugar
  • 10 Tablespoons Brown Sugar
  • 1 Cup Old Fashioned Oats
  • 1/2 Teaspoon Salt
  • 1 Cup Room Temperature Butter
  • 1 Large Eggs
  • 1 1/2 Teaspoons Almond Extract
  • 3/4 Cup Raspberry Preserves

Directions

  • Preheat oven to 350 degrees. Spray an 8x8 baking dish with nonstick spray.
  • In a mixer or medium bowl, combine sugars, flour, salt and oats.
  • Cut butter into chunks and place in mixer with dry ingredients. Add almond extract and mix until dough forms. Do not over mix.
  • Remove and set aside about half of the dough. Spread and lightly press remaining dough evenly in 8x8 pan.
  • Spread raspberry preserves over the dough leaving about a 1/4 inch border around the edges with no preserves.
  • Crumble the remaining dough over the jam.
  • Bake at 350 degrees for 40-50 minutes until topping is golden brown.
