This is a hearty rich succulent twist on a traditional Italian recipe. Osso Buco is a classic Italian comfort food that traditionally uses veal shank. This version uses beef shank which brings amazing flavor and the cooking method makes it amazingly tender too. It can be served over pasta, polenta, or my family's favorite: mashed potatoes. Much of the price of this recipe comes from pantry items (olive oil, balsamic vinegar, worcestershire sauce, pepper...)

Ingredients

  • 2 Pounds Beef Shank
  • 1 Cup Carrots - diced
  • 1 Cup Onion - diced
  • 1 Cup Celery - diced
  • 2 Garlic Clove - minced
  • 2 Tablespoons Tomato Paste
  • 4 Cups Beef Broth
  • 2 Tablespoons Balsamic Vinegar
  • 1 Tablespoon Worcestershire Sauce
  • 2 Teaspoons Ground Black Pepper
  • 2 Tablespoons Olive Oil
  • 1 Tablespoon Dry Italian Herb Mix

Directions

  • Method 1 - Stove top braise
  • Use a large skillet with lid and sear beef shanks in olive oil each side until thick crust has formed.
  • Remove meat and set aside.
  • Add diced vegetables and saute about 5 minutes.
  • Add minced garlic and tomato paste and saute about 2 minutes.
  • Add balsamic vinegar, Worcestershire sauce, pepper, and herbs.
  • Place beef in pan on top of vegetables and add beef broth until it reaches the meat level but do not entirely cover in liquid. About 4 cups.
  • Place lid on pan and cook on low heat about 2 hours or until meat is for tender.
  • Thicken sauce if desired with a cornstarch and water slurry.
  • Serve over pasta, polenta, or mashed potatoes.
  • Method 2 - Electric Pressure Cooker
  • Sear meat and saute vegetables as above on your machine's saute setting.
  • Add all ingredients back into pot and set your machine to high pressure for 30 minutes.
