A German pasta or dumpling that is super fast and easy to make. It is delicious too! It can be eaten just after being cooked in boiling water but I think it is best when also fried in butter. Use it as a side dish anywhere you would have pasta. Make your favorite old pasta dishes new with spaetzle.

Ingredients

  • 1 Cup Flour
  • 2 Large Eggs
  • 1 Teaspoon Salt
  • 1 Dash Ground Nutmeg
  • 1 Tablespoon Butter
  • 1 Sprig Fresh Thyme
  • 1/4 Cup Water

Directions

  • Bring salted water to a boil in a large pot.
  • Mix flour, water, eggs, salt, and nutmeg in a medium bowl with a whisk until smooth. Mixture should be barely runny and sticky. It should almost, but not quite, leak through the holes of a large colander.
  • Ladle mixture into a colander with large holes over pot about a cup at a time.
  • Push mixture through holes with a spatula. Drops should be a little larger than pea sized and sink to the bottom immediately.
  • Remove spaetzle from water with a slotted spoon or spider when they float. Shake extra water into pot. Spaetle should float within 30 seconds.
  • Finish by frying in butter over medium heat until some spots have turned golden brown.
  • Garnish with fresh thyme
