Rich and creamy holiday dish. For a more "breakfasty" dish, use four or five eggs. For a more "desserty" dish, replace some or all of the whole eggs with two yolks and half the milk with cream. I won't tell if you eat the dessert version for breakfast ;) Recipe amounts are approximate.

Ingredients

  • 2 Cups Whole Milk
  • 2 Cups Egg Nog
  • 1 Cup Calrose Rice
  • 3 Large Eggs
  • 1/2 Cup Sugar
  • 1 Tablespoon Vanilla Extract
  • 2 Teaspoons Nutmeg
  • 1 Dash Salt

Directions

  • Bring milk, eggnog, and salt to a low simmer in a large pot.
  • Add rice and simmer until just done, stirring occasionally.
  • While rice cooks, whisk sugar into eggs in a large bowl until eggs lighten in color.
  • Temper eggs by SLOWLY adding several cups hot milk mixture and whisking vigorously.
  • Add tempered eggs to pot and cook until mixture reaches 175f 80c. Mixture should be near this temp.
  • Remove from heat and stir in vanilla and nutmeg. Allow to cool slightly.
