Ingredients

  • 1/2 Cup Popcorn Kernels
  • 1 Cup Pecans
  • 1 Cup Brown Sugar
  • 3/4 Teaspoon Cinnamon
  • 1/2 Cup Butter
  • 1/2 Teaspoon Baking Soda
  • 1/2 Teaspoon Vanilla
  • 3 Almond Bark
  • 1/4 Cup Corn Syrup

Directions

  • Preheat oven to 300 degrees.
  • Pop popcorn kernels in an air popper into a very large bowl. You'll need extra room to stir in all of that caramel-y goodness. (You may also use a bag of microwave popcorn, but if you do, use lightly salted and buttered varieties)
  • In a large microwave safe bowl (at least a 2 quart size) combine brown sugar and cinnamon.
  • Cut butter into chunks and add to brown sugar mixture. Pour in corn syrup.
  • Microwave on high for 30 seconds then remove and stir. Microwave for 2 minutes and then stir. Microwave for 2 more minutes.
  • Remove from microwave and add vanilla and baking soda, then stir. At this point you'll know why you needed a 2 quart bowl!
  • Pour mixture over popped popcorn and stir well until evenly coated. Add pecans.
  • Line a jelly roll pan with foil and then spread popcorn evenly in pan.
  • Bake at 300 degrees for 13-15 minutes.
  • When popcorn is baked, remove from oven and pour onto a fresh sheet of parchment paper. Allow to cool.
  • While popcorn is cooling, take 3 squares of Almond Bark and melt in a microwave safe bowl according to package instructions.
  • When the popcorn is cool, take a fork and drizzle Almond Bark over it. Allow to set.
