A refined alternative to the traditionally heavy green bean casserole.

Ingredients

  • 1/2 Pound Green Beans
  • 1 Onion-Sliced
  • 4 Ounces Mushroom-Sliced
  • 1 Cup French Fried Onion
  • 1/2 Cup Parmesan-Shaved
  • 2 Tablespoons Butter

Directions

  • Wash then trim end of green beans. Julienne onion. Slice mushrooms, or use half a container of pre-sliced mushrooms.
  • Blanch green beans in a large pot of well salted boiling water until bright green in color and tender crisp, roughly 2 minutes. Drain and shock in a bowl of ice water to stop from cooking.
  • Heat a saute pan or skillet over medium heat. When hot, add butter. Place sliced mushrooms down on pan and brown. When one side is seared turn over. (Do not salt the mushrooms at this stage.)
  • Add onions to pan and cook until caramelized.
  • Add green beans to pan and mix till hot 1-2 min. Season with salt and pepper to taste.
  • Transfer from pan to serving dish. Top with shaved Parmesan cheese, and french fried onions.
