Burger fans have to try this recipe! This method gives the meat a crispy crust, and keeps it super juicy, fries onions, and inject that caramelly oniony flavor throughout. Somehow it manages to do all of that in about 2 minutes! Add cheddar cheese, butter lettuce, thousand island dressing, and homemade quick pickles on a brioche bun and you'll wonder why you ever drove through a burger joint!

Ingredients

  • 2 1/4 Pounds Ground Beef
  • 6 Brioche Hamburger Buns
  • 1 Tomato
  • 1 Butter Lettuce
  • 6 Tablespoons Thousand Island Dressing
  • 4 Ounces Sharp White Cheddar Cheese

Directions

  • Portion Ground beef into 12 2-2.5 oz balls - slightly larger than a golf ball. Season with salt and pepper.
  • Slice onion paper thin.
  • Heat a large skillet smoking hot over high heat with plenty of ventilation. A cast iron skillet is perfect for this.
  • Place a small hand full of onions in pan and top with a beef ball. Smash the burger to about 1/4 inch thick by placing the flat of a spatula on the ball and pressing with the handle of another.
  • Repeat to quickly place 3 to 4 patties in pan. Flip immediately and place a slice of cheese on each. Total cooking time should be about 1 to 2 minutes depending on how hot you have your pan.
  • Remove from pan and stack 2 high to melt cheese and keep the patty warm.
  • Serve on toasted brioche bun with your favorite toppings.

  • Cooking tip: A pan that is just hot is not enough to cook these right. If your cast iron is smoking furiously and you're a little afraid, that is just about right. Please be careful! Hot metal burns people!
