Oven baked light and fluffy pancakes with a crispy buttery top. Lots of eggs make this a great higher protein option.

Ingredients

  • 1/2 Cup All Purpose Flour
  • 1/2 Cup Milk
  • 3 Eggs
  • 1 Tablespoon Sugar

Directions

  • Put butter into a glass pie dish and place in the oven. Preheat oven to 400 degrees.
  • Put Milk, Eggs, Flour, Salt, and nutmeg in a blender and blend on high for 1 minute. Scrape sides of blender and mix for an additional 30 seconds.
  • When oven is preheated, remove pie dish from the oven and pour batter into the dish. Place the pie dish back in the oven and bake for 35 minutes (don't forget to use hot pads!)
  • After 35 minutes reduce oven temperature to 350 and bake for an additional 5 minutes.
  • Remove from oven and allow to cool. When it comes out of the oven it will fall to about half its original height, which is normal.
  • Serve warm. Top with your favorite toppings. Suggestions: a light dusting of powdered sugar, berries and cream, maple syrup, or jam!
  • Note: A single batch fits well in a pie dish. A double batch fits well in an 8x8 pan, and a triple batch fits perfectly in a 9x13 baking dish! (9x13 pictured above)
