Ingredients

  • 4 Tablespoons Butter
  • 1 Onion
  • 1/4 garlic
  • 1 Carrots
  • 4 Cups Chicken Broth
  • 4 Tablespoons Flour
  • 2 Cups Milk
  • 1 Tablespoon Dijon Mustard
  • 1 Teaspoon Salt
  • 1/2 Teaspoon Black Pepper

Directions

  • Peel and finely shred carrot. Finely mince onion and 4 cloves of garlic. Chop broccoli. Use mostly the florets and either discard larger stems or save for use in another recipe.
  • In a large soup pot melt butter and sauté onions, garlic and carrots for about 3-4 minutes.
  • Add flour and stir for 1-2 minutes.
  • Slowly add chicken stock.
  • Add milk, dijon mustard, salt and pepper.
  • Bring to a simmer and then add broccoli and cook until broccoli is tender, about 5-10 minutes. Be careful to keep the simmer low so as not to separate the milk.
  • Add cheddar and parmesan cheese and stir until melted.
  • *Optional: use an immersion blender and blend some of the chunks in for a thicker soup. You can also remove about a third of the soup and blend in a blender.
