This recipe is light years away from your childhood memories of canned corned beef. It is rich, succulent, and spicy with a crisp top crust. The required cabbage side is sauteed in butter and also a massive upgrade of the classic boiled version. Golden fluffy potatoes round out our take on this classic American celebration of St. Patrick's Day.

Ingredients

  • 1 1/2 Pounds Corned Beef Brisket
  • 1/2 Green Cabbage
  • 1 1/2 Pounds Yellow Potatoes
  • 1/2 Cup Butter

Directions

  • Preheat oven to 300F
  • Place corned beef, spices, and pickling liquid from package in a casserole dish. Add enough water to almost cover.
  • Cover with lid or parchment paper and foil.
  • Cook 3 hours or until tender.
  • Remove lid/parchment and foil cover and broil until top is crisp. About 10 minutes. If liquid dropped during braise, this step might not even take 10 minutes.
  • While beef is cooking, quarter potatoes and place cut side down in skillet with 1/2 cube of butter over medium heat. Cook 15 minutes or until potato is soft and cut side is golden brown. Season to taste.
  • Shred cabbage and saute in skillet over medium heat with 1/2 cube of butter until just tender. Season to taste.
