  • 1 Pound Corned Beef - chopped
  • 1 1/2 Pounds Yellow Potato - diced
  • 1/2 Pound Butternut Squash - chopped
  • 1 Red Bell Pepper - chopped
  • 1 Yellow Onion - chopped
  • 4 Egg
  • 2 Tablespoons Butter

Directions

  • Saute potatoes, squash, onions, and bell pepper in large skillet with butter over medium heat
  • Add meat when vegetables are brown to heat through.
  • Top with over easy egg.
